Yaw is under "Flight rotation." you can't bind the "Yaw axis" to buttons, since an "axis" requires analogue input. So ignore that and bind LS to Yaw left and RS to Yaw right. WebFlight Assist off allows you to travel in a different direction than the ship is pointing. For a skilled pilot this can be useful, but you're right it makes the ship much harder to control so it takes a lot of practice to actually be useful.
